yellow onion, finely chopped (about ¼ of a medium onion)

Step 1
Heat oil in a medium saucepan over medium heat. Stir in onions and cook until soft approx. 5- 8 minutes. Add garlic and sautéed about 1 minute until fragrant but don’t burn.Pour rice into saucepan stir to coat then pour in the spices and 2 cups water and stir to combine.
Step 2
Bring rice mixture to a boil. Lower heat to medium low and simmer, covered until rice is tender and water is absorbed completely, about 25 minutes.
Step 3
Fluff rice with a fork and let it sit, covered for 5 minutes before serving.
