Simply marinate the chicken with versatile GOYA® Mojo Criollo Marinade and GOYA® Adobo All-Purpose Seasoning with Pepper. Once marinated, grill it until it’s golden and cooked through, then elevate the flavor even more by adding a rich BBQ sauce made with butter, garlic, ketchup, chili powder, honey, brown sugar, vinegar, mustard, and a touch of mojo. Leave it on the grill for a few more minutes until it’s perfectly grilled and caramelized. Finger-licking good!

bone-in skin-on chicken thighs

1 jar (24 oz.)

GOYA® Mojo Criollo Marinade, divided

1 tbsp.

GOYA® Adobo All-Purpose Seasoning with Pepper

2 tbsp.

butter

2 tbsp.

GOYA® Minced Garlic

1 cup

GOYA® Ketchup

¼ cup

GOYA® Apple Cider Vinegar

2 tbsp.

+ 2 tsp. GOYA® Piloncillo Brown Sugar, grated

1 tbsp.

GOYA® Chili Powder

1 tbsp.

GOYA® Pure Honey

1 tbsp.

Dijon mustard

1 tbsp.

chopped fresh parsley

Step 1

In large resealable bag, toss chicken with 1 1/4 cups Mojo Criollo and Adobo seasoning. Seal, massage to coat and marinate in the refrigerator for at least 1 hour and up to 24 hours.

Step 2

Preheat grill to medium heat; grease grate well.

Step 3

In small saucepan set over medium heat, melt butter. Add garlic and cook, stirring occasionally, for 1 to 2 minutes or until softened and fragrant. Stir in ketchup, vinegar, brown sugar, chili powder, remaining mojo criollo, honey and mustard; bring to a boil. Reduce heat to low and cook, stirring occasionally, for 15 to 20 minutes or until barbecue sauce is thickened and reduced by half. Remove from heat and cover to keep warm.

Step 4

Remove chicken from marinade (discard marinade). Grill chicken, turning once, for 4 to 6 minutes or until golden and grill-marked. Reduce heat to medium-low and cook, turning, for 15 to 20 minutes or until chicken is cooked through and an instant-read thermometer registers 165˚F when inserted into the thickest part of chicken.

Step 5

Baste chicken with half the barbecue sauce. Cook, turning, for 3 to 5 minutes or until barbecue sauce starts to caramelize.

Step 6

Serve chicken with remaining barbecue sauce for dipping. Garnish with parsley.

 

Note: For a spicier sauce, spike barbecue sauce with GOYA® Chipotle Peppers in Adobo Sauce or GOYA® Hot Sauce.
