bananas, over-ripe, sliced

eggs, large
½ cup
brown sugar
½ cup
greek yogurt
1 tsp.
vanilla extract
2 cups
flour
2 tsp.
baking powder
½ tsp.
baking soda
1½ tsp.
GOYA® Ground Cinnamon
½ tsp.
GOYA® Salt
¾ cup
walnuts, chopped

Step 1
Preheat oven to 350°F.
Step 2
Drain beans, reserving two tablespoons liquid. Add beans and reserved liquid to food processor, and puree until smooth. Add bananas, eggs, brown sugar, yogurt, vanilla and olive oil. Puree until smooth.
Step 3
In large mixing bowl, combine flour, baking powder, baking soda, cinnamon and salt. Stir to mix thoroughly.
Step 4
Combine wet ingredients into dry ingredients, and mix until integrated into thick batter. Don't over-mix. Fold in walnuts, and stir to combine.
Step 5
Spoon batter into greased loaf pan, and bake for 40-45 minutes, or until skewer inserted into center comes out clean. Allow to cool.
Step 6
Slice and serve.
