There’s nothing like these delicious Grilled Chicken Skewers with Salsa Criolla to amaze your family at a bbq get-together. This tasty and colorful recipe is very easy to prepare. Simply marinate the chicken in convenient GOYA® Mojo Criollo Marinade, put the skewers together and toss with GOYA® Extra Virgin Olive Oil, Adobo, and lime juice before grilling at medium-high heat. Once ready, serve with Salsa Criolla made with tomatoes, peppers, onions, jalapeños, olive oil, lemon juice, vinegar, and cilantro. Simply delicious!

boneless, skinless chicken breasts, cut into 1-inch cubes

Argentinian-Style Salsa Criolla

plum tomatoes, seeded and diced
½
small green bell pepper, seeded and diced
½
small red bell pepper, seeded and diced
½
white onion, diced
½
fresh jalapeño pepper, seeded and diced
2 tbsp.
GOYA® Lemon Juice
2 tbsp.
GOYA® Red Wine Vinegar
1 tbsp.
chopped fresh cilantro
Step 1
Grilled Chicken Skewers: Toss chicken with mojo criollo; refrigerate for at least 4 hours or up to overnight.
Step 2
Argentinian-Style Salsa Criolla: Meanwhile, in bowl, toss together tomatoes, green and red bell peppers, white onion, jalapeño, oil, lemon juice, red wine vinegar, cilantro and adobo seasoning.
Step 3
If using bamboo skewers, soak in water for 15 to 20 minutes to prevent charring. Remove chicken from marinade, discarding marinade. Thread chicken onto skewers; toss gently with oil, lime juice and adobo seasoning.
Step 4
Preheat grill to medium-high heat, grease grate well. Grill chicken skewers, turning occasionally, for 10 to 14 minutes or until chicken is well marked, cooked through and internal temperature reaches 165˚F.
Step 5
Serve chicken skewers with salsa.
Note: Serve skewers with grilled flatbread or steamed rice if desired.
